Salmon Mango Avo Jicama Taco

These definitely tricked my mind into thinking I was eating a real taco. Of course a traditional flour or corn tortilla will always be my number one choice. But I also really dig new ideas like this one. Especially when I'm trying to consume more veggies.

These Jicama wraps are made with 1 ingredient, Jicama. They're a Mexican turnip and only 15 calories a piece! It’s filled with fresh salmon, mango, tomato, avocado, cilantro & lime. So fresh, so good. Thank you to 'My Healthy Dish' for your creative low carb but nutritious and not to mention flavorful dishes. Recipe makes about 16 tacos but the Jicama wraps are small so one serving is equivalent to 4 of the tacos.

Makes 4 servings.

Ingredients:
  • 1 lb of salmon
  • 1 pack Jicama wraps (I found mine at Trader Joe's)
  • 2 tbsp. olive oil
  • Sea salt to taste
  • 1 mango sliced into 1 inch cubes
  • 1 tomato sliced into 1 inch cubes
  • 1 avocado sliced into 1 inch cubes
  • 2 tbsp. chopped cilantro
  • 1/2 lime
Instructions:
  1. Set the oven to 350°F and line baking pan with parchment paper or tin foil
  2. Place your salmon on the pan. Coat with olive oil and sprinkle sea salt over top
  3. Toss it in the oven for 18 minutes or until the internal temperature reads 145
  4. Meanwhile, mix together the mango, avocado, tomato, cilantro and lime juice
  5. Lastly, top the jicama with the cooked salmon and the mango avocado salad. Wrap it into a taco
