Mrs. Lantz's Blackberry Cobbler
Jennifer Garner shared this simple short and sweet summer dessert on her page and I had to try it out before summer’s end. Thank you Mrs. Lantz for sharing your family recipe!
Ingredients:
- 4 cups of blackberries
- 1 cup sugar
- 1 cup all-purpose flour
- 1/4 tsp. salt
- 1 egg
- 1/4 tsp almond extract
- 1 tbsp. lemon juice
- 6 tbsp butter + extra for buttering pan
Directions:
- Set the oven to 425º F and butter a 7x10 baking pan, or 9x13 (but bake for less time since its a larger surface area - make sure that the top is golden)
- Clean the blackberries in cold water, drain the water, pat them dry (or don't according to Jen's mom) and pour them into the bottom of the baking dish
- Combine the lemon juice and almond extract, and drizzle evenly over the berries
- Whisk together the sugar, flour, salt, and egg until it comes together into a crumbly mixture. Use your fingers to press and mix it together into a crumbly dry dough. Then pour over top the blackberries
- Melt the 6 tbsp. of butter and drizzle it on top. Toss it in the oven for 25 minutes (or more if not golden enough), and serve with vanilla ice cream! Best if eaten fresh.
