Melissa Wood Health Salad Wrap

This is a great new lunch idea for anyone who wants something more filling and decadent than a traditional salad but still packed with veggies and flavor! This also includes a super delicious Creamy Avo & Lime Dressing recipe that you can store up to 3 days and use on any sandwiches or other meals you make. Enjoy!

Wrap Ingredients:
  • Ezekial Tortilla/ Grains & Seeds Tortilla
  • 1-2 tbsp. of vegannais or regular mayonnaise 
  • 1 1/2 cup of mixed greens
  • Pinch of chopped basil
  • Pinch of chopped cilantro
  • 1/2 of a thinly sliced Roma tomato 
  • 1/2 of a thinly sliced avocado
  • 2 tbsp. of sauerkraut 
  • 1 tsp. of salsa
  • Few slices of green peppers
  • Few slices of banana peppers
  • Sea Salt & pepper to taste 
  • 2 tbsp. of Creamy Avo and Lime Dressing (ingredients and recipe below) 
  • 2 tbsp. of hummus 
Creamy Avo and Lime Dressing:
  • 1 avocado 
  • 1/2 clove of peeled garlic or white onion
  • 1/2 cup cup roughly chopped cilantro (optional) or parsley
  • 1/4 cup chopped red bell pepper
  • 1/4 cup filtered water
  • 1 tbsp. fresh lime
  • 1 tbsp. white vinegar
  • 3 tbsp. olive oil
  • 1/4 tsp. sea salt
  • 1/4 tsp. ground black pepper
Wrap Instructions:
  1. Start by spreading vegannais or mayonnaise on the tortilla. Layer the mixed greens, basil and cilantro, tomato slices, avocado slices, sauerkraut, medium salsa, green peppers, banana peppers, salt and pepper. Finish by topping your wrap with Creamy Avo and Lime Dressing and hummus. Enjoy! 
Creamy Avo and Lime Dressing Instructions: 
  1. Mash the avocado in a bowl and add in all the ingredients. Then mix well! No need for a blender.
