Lazy Night Pesto Prosciutto Pizza
This has been our go-to lazy night pizza for the last few years! It takes a grand total of 15 minutes to prep and cook. I use only Trader Joe’s ingredients but you can of course shop elsewhere and make an amazing pesto pizza! The only thing I’ll harp on is that wherever you get mozzarella, make sure it isn’t pre-grated. Nobody wants that dry, tough-to-melt “cheese." Recipe below.
Ingredients:
- Refrigerated pizza dough
- 3/4 cup of pesto or however much you need to cover the pizza (I use the freshly made basil/kale pesto from TJ)
- Block of Mozzarella Cheese (no pre-grated)
- 4-5 slices of Prosciutto
- 2-3 handfuls of Arugula
Instructions:
- If you're using the Trader Joe's pizza dough, set the oven to 425°F. Any other refrigerated pizza dough will provide instructions for temperature and cook time, follow those.
- Cover a work surface with a handful of flour. Do the same on a rolling pin before rolling the dough - this helps to keep it from sticking.
- Roll out your pizza dough. If the dough is tough to spread, I drape it over my fists and gently push upward. That helps to stretch it out.
- Cover the dough in pesto, freshly grated mozzarella, prosciutto (ripped into pieces), and the handfuls of Arugula. Toss it in the oven for 8-10 minutes and done!
