Chocolate Covered Peanut Butter Date Balls
This is a short and sweet snack or healthy dessert bite recipe! It’s 5 ingredients plus some sea salt flakes to make these. They are super delish and you don’t feel as bad eating them. Recipe below!
Ingredients:
- 5 medjool dates
- 3 tbsp. old fashioned oats
- 1/2 cup creamy salted peanut butter
- 1/2 cup chocolate chips (Lily's or Enjoy Life are vegan options)
- 1/2 tbsp coconut oil
- Flaky sea salt
Instructions:
- Use a food processor to chop the dates into small pieces. Add in the oats and peanut butter, and pulse until combined
- Roll them into tbsp size balls, and freeze on parchment paper for a few hours
- Melt the chocolate chips and coconut oil together in a bowl by heating in the microwave for 30 second intervals
- Use a tooth pick to dip the hardened date balls into the chocolate or use a spoon to coat it. The chocolate will quickly harden from the cold temperature of the date ball. Before it hardens, sprinkle a pinch of flaky sea salt on top
- Throw the chocolate covered date balls in the freezer for 30 minutes, and then enjoy! Store in the fridge afterward.
